Ingredients
  

  • 6 bone-in chicken thighs with skin removed about 2 1/2 pounds
  • Salt and black pepper
  • 1 teaspoon oil
  • 2 cans coconut milk 13.5 ounces each
  • 2 tablespoons dried basil
  • 2 teaspoons salt
  • 3/4 teaspoon black pepper
  • 1 1/2 tablespoons yellow curry powder
  • 1/2 to 3/4 teaspoon chili powder
  • 1 large red onion diced
  • 8 garlic cloves finely chopped
  • 2 jalapenos seeded and minced
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 1 teaspoon fresh ginger grated or minced
  • 1/3 to 1/2 cup chopped fresh cilantro

Method
 

  1. Pull the skin off the chicken thighs, using your hands and a serrated knife if needed. Season both sides with salt and pepper.
  2. Warm a large skillet over medium-high heat and add the oil.
  3. Once the pan is hot, place in 3 chicken thighs, leaving space between them so they brown instead of steam. Cook for about 2 minutes until golden underneath, then turn and cook the second side for another 1 to 2 minutes. Transfer to a plate.
  4. Brown the remaining 3 thighs the same way. Add a little more oil only if the pan looks dry.
  5. In the slow cooker, pour in the coconut milk. Add the dried basil, salt, pepper, curry powder, and chili powder, then stir until blended.
  6. Mix in the chopped onion, garlic, and jalapenos.
  7. Nestle the browned chicken into the sauce and spoon some of the mixture over the top.
  8. Cover and cook on high for 4 to 5 hours or on low for 6 to 8 hours.
