Ingredients
  

  • 2 flatbreads or naan store-bought or homemade
  • 1 cup cooked shredded chicken rotisserie chicken works best
  • ½ cup BBQ sauce plus extra for drizzling
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded sharp cheddar cheese
  • ¼ cup thinly sliced red onion
  • 2 tablespoons chopped fresh cilantro or parsley
  • 1 tablespoon olive oil or garlic butter optional for brushing base

Method
 

  1. Heat the oven
  2. Set your oven to 425°F (220°C) and line a baking sheet with parchment paper or foil.
  3. Mix the chicken
  4. Toss the shredded chicken with 1/2 cup BBQ sauce in a bowl until everything is well coated.
  5. Prep the flatbreads
  6. Place the flatbreads on the baking sheet, then lightly brush them with olive oil or garlic butter for extra flavor and crisp edges.
  7. Add a little sauce
  8. Spread a thin layer of BBQ sauce over each flatbread if you want even more barbecue flavor.
  9. Layer everything on
  10. Sprinkle half of the mozzarella and cheddar over the flatbreads. Add the BBQ chicken, scatter the red onion over the top, and finish with the remaining cheese.
  11. Bake until melty
  12. Bake for 10–12 minutes, or until the cheese is melted and the edges are golden and crisp.
  13. Finish and serve
  14. Remove from the oven, sprinkle with cilantro, and add any extra toppings you like, such as jalapeños or a drizzle of BBQ sauce. Slice and serve right away while it’s still hot and cheesy.
