Ingredients

  • For the Cheesecake Filling
  • 4 ounces cream cheese softened
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ cup fresh strawberries finely chopped
  • For the French Toast
  • 4 slices thick-cut bread challah, brioche, or Texas toast work beautifully
  • 2 large eggs
  • ½ cup milk
  • 1 teaspoon ground cinnamon
  • Butter for cooking
  • For Serving
  • Powdered sugar for dusting
  • Optional: maple syrup fresh strawberries, whipped cream

Method

  1. Step 1: Make the Cheesecake Filling
  2. In a medium bowl, combine the softened cream cheese, sugar, and vanilla extract. Mix until smooth and creamy, then gently fold in the chopped strawberries. Set aside.
  3. Step 2: Assemble the Sandwiches
  4. Spread a generous layer of the cheesecake mixture onto two slices of bread. Top with the remaining two slices to form sandwiches. Don’t be shy with the filling—this is the star of the show.
  5. Step 3: Prepare the Egg Mixture
  6. In a shallow bowl or pie plate, whisk together the eggs, milk, and cinnamon until well combined.
  7. Step 4: Coat the Sandwiches
  8. Dip each sandwich into the egg mixture, turning to coat both sides evenly. Allow any excess to drip off before transferring to the skillet.
  9. Step 5: Cook to Golden Perfection
  10. Heat a skillet or griddle over medium heat and add a pat of butter. Once melted and sizzling, place the sandwiches in the pan. Cook for 3 to 4 minutes per side, or until golden brown and crisp on the outside.
  11. Step 6: Serve and Enjoy
  12. Transfer the stuffed French toast to plates, dust with powdered sugar, and add any extra toppings you like. Serve warm and watch them disappear.
