Step 1: Prepare the Potatoes
Add the diced potatoes to the bottom of the slow cooker. Season lightly with salt and black pepper.
Step 2: Build the Cream Sauce
In a saucepan over medium heat, warm the olive oil and sauté the garlic until fragrant.
Add the heavy cream, cream cheese, and chicken broth. Stir until smooth and gently simmer for several minutes.
Whisk in the Parmesan cheese and Italian seasoning. Continue stirring until the sauce is creamy and fully combined.
Step 3: Sear the Pork Chops
Season the pork chops with salt and pepper.
Heat a skillet over medium-high heat and quickly brown both sides of the pork chops. They do not need to cook through completely.
Transfer them on top of the potatoes in the slow cooker.
Step 4: Cook the Vegetables
In the same skillet, cook the mushrooms and onion until lightly softened and golden.
Spread the mixture over the pork chops.
Step 5: Add the Sauce
Pour the creamy garlic sauce evenly over everything in the slow cooker.
Step 6: Slow Cook
Cover and cook:
Low: 6–8 hours
High: 3–4 hours
The pork should be tender and the potatoes fork-soft.
Step 7: Serve
Garnish with parsley, extra Parmesan, and a sprinkle of black pepper before serving.
