Easy Weeknight Crockpot Creamy Garlic Pork Chops and Potatoes

Ingredients
  

  • For the Pork and Potatoes
  • 4 to 5 boneless pork loin chops
  • pounds Yukon Gold or yellow potatoes peeled and cut into chunks
  • 2 cups mushrooms sliced or chopped
  • 1 medium onion finely diced
  • Salt to taste
  • Freshly cracked black pepper to taste
  • 1 tablespoon olive oil
  • For the Creamy Garlic Sauce
  • 6 garlic cloves minced
  • 1 cup heavy cream
  • 4 ounces cream cheese softened
  • ½ cup chicken broth
  • ¾ cup freshly grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • ½ teaspoon crushed red pepper flakes optional
  • For Garnish
  • Chopped fresh parsley
  • Extra Parmesan cheese
  • Additional black pepper

Method
 

  1. Step 1: Prepare the Potatoes
  2. Add the diced potatoes to the bottom of the slow cooker. Season lightly with salt and black pepper.
  3. Step 2: Build the Cream Sauce
  4. In a saucepan over medium heat, warm the olive oil and sauté the garlic until fragrant.
  5. Add the heavy cream, cream cheese, and chicken broth. Stir until smooth and gently simmer for several minutes.
  6. Whisk in the Parmesan cheese and Italian seasoning. Continue stirring until the sauce is creamy and fully combined.
  7. Step 3: Sear the Pork Chops
  8. Season the pork chops with salt and pepper.
  9. Heat a skillet over medium-high heat and quickly brown both sides of the pork chops. They do not need to cook through completely.
  10. Transfer them on top of the potatoes in the slow cooker.
  11. Step 4: Cook the Vegetables
  12. In the same skillet, cook the mushrooms and onion until lightly softened and golden.
  13. Spread the mixture over the pork chops.
  14. Step 5: Add the Sauce
  15. Pour the creamy garlic sauce evenly over everything in the slow cooker.
  16. Step 6: Slow Cook
  17. Cover and cook:
  18. Low: 6–8 hours
  19. High: 3–4 hours
  20. The pork should be tender and the potatoes fork-soft.
  21. Step 7: Serve
  22. Garnish with parsley, extra Parmesan, and a sprinkle of black pepper before serving.
