Ingredients

  • 1 pound ground beef
  • 1 small onion finely chopped or grated
  • 1 large egg optional
  • 1/4 cup breadcrumbs optional
  • 1 tablespoon Dijon mustard or yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon garlic powder
  • 3/4 teaspoon salt
  • 1 teaspoon black pepper
  • 4 sliced hamburger buns sliced

Equipment

  • 1 Measuring cups and spoons
  • 1 Chef’s knife
  • 1 Cutting board
  • 1 Fork
  • 1 Rimmed baking sheet or serving tray
  • 1 Plastic wrap

Method

  1. Make the Patties
  2. In a large bowl, whisk the egg first if you’re using it. Add the breadcrumbs if using, then mix in the garlic powder, onion, mustard, salt, Worcestershire sauce, pepper, and ground beef.
  3. Stir everything together just until combined. Try not to overwork the meat.
  4. Divide the mixture into 4 equal portions and shape them into patties about 3/4 inch thick. Cover with plastic wrap and chill until you’re ready to cook.
  5. Cooking Methods
  6. Grill Method
  7. Set a grill to medium-high heat. Place the patties on the hot grill and cook for about 5 minutes per side, or until the centers are fully cooked and no pink remains.
  8. Stovetop Method
  9. Heat a skillet over medium heat. Add the patties and cook for roughly 5 minutes on each side, or until cooked through.
  10. Oven Method
  11. Arrange the patties on a baking sheet and bake at 375°F for about 15 minutes. Turn them once around the halfway point, about 8 minutes in.
  12. Assemble the Burgers
  13. Place each cooked patty on a bun and finish with the toppings you like best. Serve warm.

Notes

  • Ground beef with an 80/20 fat ratio gives the burgers the best flavor and juiciness.
  • Shape the patties evenly so they cook at the same rate.
  • Do not press down on the burgers while they cook, or you’ll lose the juices.
  • Press a shallow dent into the center of each patty to help keep it flatter during cooking.
  • Avoid mixing the meat too much, since that can make the burgers firm instead of tender.
  • Form the patties a little larger than the buns because they will shrink as they cook.
  • Keep the beef cold until cooking time for better texture and flavor.
  • Let the burgers rest for a couple of minutes before serving so the juices stay inside the meat.
Pick buns that are soft but sturdy enough to hold the burger and toppings without falling apart
