Add the ground turkey, breadcrumbs, egg, mayonnaise, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, pepper, jalapeño, pepper jack, and herbs to a large bowl.
Mix gently until just combined. Be careful not to overwork the meat or the burgers can turn dense.
Divide the mixture into 4 equal portions and shape into patties. Press a small dent into the center of each one so they cook evenly.
Heat a large skillet or grill pan over medium heat and add the olive oil. If grilling outdoors, oil the grates well before cooking.
Cook the patties for about 4 to 5 minutes per side, or until cooked through and golden on the outside. If you want extra cheese on top, add it during the last minute and cover briefly to melt.
Toast the buns if desired. Assemble the burgers with lettuce, tomato, onion, avocado, or sauce, then serve hot.
