Ingredients
  

  • For the Turkey Burgers
  • 1 1/4 pounds ground turkey
  • 1/3 cup plain breadcrumbs
  • 1 egg
  • 2 tablespoons mayonnaise
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons finely chopped parsley optional
  • 1 tablespoon olive oil for cooking
  • For Serving
  • 4 burger buns
  • Lettuce
  • Sliced tomato
  • Sliced red onion
  • Cheese slices optional
  • Pickles
  • Burger sauce mayonnaise, or mustard

Method
 

  1. In a large bowl, combine the ground turkey, breadcrumbs, egg, mayonnaise, Worcestershire sauce, Dijon mustard, garlic powder, onion powder, paprika, salt, pepper, and parsley.
  2. Mix gently until everything is just combined. Do not overwork the mixture or the burgers can turn dense.
  3. Divide the mixture into 4 equal portions and shape into patties. Press a slight dent into the center of each one so they cook more evenly.
  4. Heat a large skillet or grill pan over medium heat. Add the olive oil.
  5. Cook the patties for about 4 to 5 minutes per side, or until they are cooked through and lightly golden on the outside.
  6. If using cheese, place a slice on each patty during the last minute of cooking and cover briefly so it melts.
  7. Toast the buns if you like, then assemble the burgers with your favorite toppings and serve hot.

Notes

Ground turkey is lean, so a little added moisture helps the patties stay tender. Mayonnaise, egg, and breadcrumbs work together to keep the burgers juicy and easy to shape.
Do not overmix the burger mixture. Stir just until combined so the texture stays soft.
If the mixture feels too sticky, chill it for 10 to 15 minutes before shaping the patties.
Cook turkey burgers over medium heat instead of very high heat. This helps them cook through without drying out.
Use a thermometer if you want extra confidence. Turkey burgers are done when the center reaches 165°F.
These burgers are great for make-ahead prep. Shape the patties earlier in the day and keep them covered in the refrigerator until dinner time.
