Method
 

  1. Get the oven ready
  2. Set the oven to 375°F (190°C). Lightly coat a 9-inch pie dish with oil or butter so the quiche releases easily after baking.
  3. Soften the vegetables
  4. Warm the olive oil in a skillet over medium heat. Add the onion and cook until tender. Stir in the spinach and cook just until wilted. Take the pan off the heat and let the mixture cool slightly.
  5. Mix the custard
